Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tapioca
Its starch swells in hot milk and thickens the pudding as it cools.
Eggs
Egg yolks thicken the custard and add richness and a smooth texture.
Egg whites
Whipped into a foam, they form the meringue topping that browns and holds its shape.
Sugar
Adds sweetness and helps stabilize the meringue foam.
Sweet milk
Forms the liquid base that the tapioca cooks in, giving body and richness.

The step that matters

Let it boil until it thickens. Tapioca starch must be fully hot to swell and thicken the milk, so it needs enough heat and time. Egg yolks can curdle or scramble if the mixture is overheated, so keep the heat controlled while it thickens.
