Jelly-cake

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Preheat the oven to 400°F (200°C).

  2. Grease shallow tin pans or plates.

  3. Pour the batter into the pans to a thickness of about ½ inch.

  4. Bake until light brown, about a few minutes.

  5. Remove from the oven and place on a flat surface.

  6. Spread a layer of jelly on top of each cake.

  7. Stack the cakes with jelly between each layer, reserving the nicest-looking cake for the top without jelly.

  8. Dust with sifted sugar and cut into slices before serving.
