Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Peaches
Provide the main fruit flavour and the body of the puree once cooked and strained.
Syrup
Adds sweetness and, once frozen, softness by lowering the freezing point.
Lemon juice
Adds acidity that brightens the peach flavour and balances the sweetness.

The step that matters

Rub the mixture through a strainer. Pushing the cooked peaches through a strainer removes skins and fibrous solids, leaving a smooth puree. Any leftover solids can make the frozen ice cream grainy or stringy.

Swap the lemon

How well each one fits the dish's main ingredients (peach, syrup):

  1. Vanillafits better
  2. Apricotfits better
  3. Pearfits better
  4. Lemonthe original

Fit is the average pairing score against peach, syrup. Candidates are from the same food group and used in at least 100 recipes.
