Chocolate Meringue

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the custard

  1. Scrape the chocolate into the milk and boil with the sugar.

  2. Stir in the yolks of the eggs and corn starch mixed smooth with a little milk.

  3. Boil until it begins to thicken, then pour into a pudding dish.

Top and bake

  1. When slightly cool, spread the beaten egg whites mixed with ⅔ cup of sugar over the top.

  2. Brown in the oven at 350°F (175°C).

What each ingredient does

Milk
Forms the liquid base of the custard that sets when thickened.
Eggs
Yolks thicken the custard, and beaten whites form the meringue topping.
Corn starch
Thickens the custard as it boils.
Chocolate
Provides the chocolate flavour and colour of the custard.
Sugar
Sweetens the custard and, dissolved into the whites, helps the meringue hold its shape.

The step that matters

Boil until it begins to thicken. Cornstarch must reach a boil to swell and thicken the custard fully. Stopping too early leaves the pudding thin, while overheating can cause the egg yolks to curdle.
