Ingredients

Directions

Make the batter

  1. Mix the flour, cream, treacle, ginger essence, butter, and salt in a saucepan.

  2. Stir the mixture while boiling for 3 minutes.

Cook the wafers

  1. Heat a copper baking sheet over a charcoal stove until moderately hot.

  2. Drop a tablespoonful of batter onto the baking sheet.

  3. Spread the batter to the size of a small saucer.

Flour and butter barely smell alike, yet cooks put them together in 124,287 recipes: they work on texture and structure more than aroma.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Provides the structure that holds the wafers together as they set.
Single cream
Adds moisture and richness to the batter.
Treacle
Adds sweetness and deep colour, and helps the wafers brown.
Butter
Adds fat, giving the wafers a tender texture and rich flavour.

The step that matters

Spreading and flattening the batter on the hot sheet. The batter must be spread thin while bubbles rise, so the wafers cook evenly and dry out to a crisp texture rather than staying soft or thick in the centre.

Swap the ginger

How well each one fits the dish's main ingredients (flour, cream, butter):

  1. Nutmegfits better
  2. Jalapenofits better
  3. Capersfits better
  4. Gingerthe original

Fit is the average pairing score against flour, cream, butter. Candidates are from the same food group and used in at least 100 recipes.
