Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Thicken the custard as they heat and add richness to the frozen ice.
Sugar
Adds sweetness and softens the texture of the frozen ice.
Milk or cream
Forms the liquid base, adding richness and creaminess.
Pralines or burnt almonds
Add nutty, caramel flavour and body from the bruised pulp.
Candied orange, lemon, and citron peels
Add chewy texture and bright citrus flavour throughout the ice.

The step that matters

Heating the custard until it thickens. Egg yolks set as they heat, so heating too fast or too long can scramble them into lumps. Stir constantly and stop once the mixture coats a spoon.

Swap the coriander

How well each one fits the dish's main ingredients (milk, egg, sugar, almond, clove, cinnamon, orange):

  1. Nutmegfits better
  2. Cardamomfits better
  3. Allspicefits better
  4. Corianderthe original

Fit is the average pairing score against milk, egg, sugar, almond, clove, cinnamon, orange. Candidates are from the same food group and used in at least 100 recipes.
