Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Thicken the mixture and add richness and a smooth, creamy texture when frozen.
Syrup
Sweetens the mixture and lowers its freezing point so it stays softly textured.
Double cream, whipped
Adds fat and air, giving a lighter, creamier texture to the frozen biscuits.
Peach pulp
Provides the main peach flavor and moisture in the frozen biscuit base.

The step that matters

Refreezing the molds in rough ice with salt. Salted ice gets colder than plain ice, so the mixture must freeze firmly and evenly. Without enough cold, the biscuits stay soft and will not hold their slice shape.
