What each ingredient does

Cherry juice
Provides the main cherry flavour and the base liquid of the ice.
Syrup
Adds sweetness and lowers the freezing point so the ice stays softer.
Lemon juice
Adds acidity that brightens the cherry flavour and balances the sugar.

The step that matters

Freezing until solid. The sugar and acid in the syrup and juice lower the freezing point, so the mixture takes longer to set than plain water. Stirring well first spreads the sugar and flavour evenly, so the ice does not freeze in uneven layers.

Swap the lemon

How well each one fits the dish's main ingredients (cherry, syrup):

  1. Vanillafits better
  2. Peachfits better
  3. Apricotfits better
  4. Lemonthe original

Fit is the average pairing score against cherry, syrup. Candidates are from the same food group and used in at least 100 recipes.
