Amber Pudding

Ingredients

Directions

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the filling

  1. Juice and zest the lemons, being careful not to cut into the white part.

  2. In a saucepan, combine butter, apples, lemon rind, lemon juice, and water. Cover tightly and simmer for 30 minutes.

  3. Rub the mixture through a sieve, add sugar to taste, and let it cool.

Assemble and bake

  1. Line a pudding dish with the paste.

  2. Beat the egg yolks and stir them into the cooled mixture. Pour this into the lined dish.

  3. Bake at 300°F (150°C) for 30 minutes.

Top and serve

  1. Beat the egg whites to stiff peaks, gradually adding the powdered sugar.

  2. Spread the meringue on top and brown slightly.

  3. Serve hot or cold.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Yolks thicken the cooled filling, while whites whip into the meringue topping.
Butter
Adds richness and a tender, rounded flavour to the cooked apple filling.
Apples
Cook down to a soft pulp that forms the body of the pudding.
Lemons
Juice and rind add bright acidity and aroma that balance the sweetness.
Powdered sugar
Dissolves easily into the egg whites, stabilising the meringue for browning.

The step that matters

Beat the egg whites to stiff peaks. Whites must be whipped until they hold firm peaks before the sugar is added gradually. Under-whipped or greasy whites will not hold their shape, so the meringue may weep or flatten in the oven.

Swap the apple

How well each one fits the dish's main ingredients (lemon, egg, butter, sugar):

  1. Vanillafits better
  2. Orangefits better
  3. Raspberryfits better
  4. Applethe original

Fit is the average pairing score against lemon, egg, butter, sugar. Candidates are from the same food group and used in at least 100 recipes.
