Royal Sago Pudding

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the custard

  1. Wash the sago and place it in a saucepan with the milk.

  2. Let it stand in boiling water until the sago swells.

  3. While hot, stir in the butter and sugar, then add flavoring.

  4. Once cool, mix in the beaten egg yolks and pour into a buttered pudding dish.

Bake and finish

  1. Bake at 350°F (175°C) for 30 to 45 minutes until set.

  2. Remove from the oven and let cool.

  3. Beat the egg whites with powdered sugar until frothy.

  4. Spread jam over the pudding, then top with the frosting.

  5. Return to the oven for 2 minutes to brown slightly.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sago
Swells in hot liquid to thicken the pudding and give it a soft, chewy body.
Milk
Forms the liquid base that sago swells in and sets into a creamy custard.
Egg yolks
Enrich the custard and help it set firm when baked.
Butter
Adds richness and a smooth, tender mouthfeel.
White sugar
Sweetens the pudding and adds body to the custard.

The step that matters

Baking until set. Egg yolks coagulate with heat and firm the custard, so underbaking leaves it runny while overbaking can make it grainy or weep. Check for a set centre within the stated time range.

Swap the raspberry

How well each one fits the dish's main ingredients (milk, butter, sugar, egg):

  1. Vanillafits better
  2. Figfits better
  3. Coconutfits about as well
