Puddings and Dumplings

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. Preheat the oven to 350°F (175°C).

  2. Beat the yolks of 4 eggs and 2 whole eggs with the sugar until light.

  3. Boil the milk, then pour it over the bread and chocolate.

  4. Add the beaten eggs, sugar, and vanilla; ensure it is sweet enough.

  5. Pour the mixture into a buttered dish and bake for 1 hour.

  6. Once cooled, beat the 4 egg whites with a little powdered sugar and vanilla to make a meringue.

  7. Serve the pudding with the meringue on top.
