What each ingredient does

Veal
Its bones and meat release gelatin and flavor into the broth as it stews.
Ham or bacon
Adds smoky, salty flavor to the broth during the long stew.
Onions
Build savory depth and sweetness as they soften in the broth.
Celery
Contributes aromatic, savory flavor to the broth as it simmers.
Carrot
Adds subtle sweetness and body to the soup as it cooks.
Turnip
Adds mild earthy flavor and becomes tender during the simmer.

The step that matters

Stewing the meat slowly until it falls apart. Gentle, slow heat lets collagen in the bones and meat break down into gelatin, giving the broth body. Rapid boiling makes the meat tough and the broth cloudy.

Swap the onion
