Apple Dumplings

Ingredients

Directions

Prepare the apples

  1. Peel the apples and remove the cores without cutting them in half.

  2. Fill each core with brown sugar, lemon peel chips, and a squeeze of lemon juice, or use raspberry jam or marmalade.

Make and wrap the dumplings

  1. In a bowl, mix the suet and flour, then add just enough water to form a dough.

  2. Roll out the dough to a moderate thickness and cut into circular pieces, using two pieces for each dumpling.

  3. Place an apple on one piece of dough, cover it with another piece, and seal the edges tightly.

  4. Wrap each dumpling in a small coarse cloth that has been dipped in hot water, tying it tightly but leaving space for the dumpling to swell.

  5. Dust the inside of the tying place with flour to prevent water from entering.

Boil and serve

  1. Boil a pot of water and cook the dumplings for 45 minutes to 1 hour.

  2. Serve hot in a covered dish just before serving.

What each ingredient does

Suet
Adds fat that keeps the crust rich and tender as it cooks.
Flour
Forms the dough structure that holds the apple and wraps it during boiling.
Apples
Provide the fruit filling that softens and becomes sweet and moist as it cooks.
Brown sugar
Adds sweetness and caramel flavour to the filling as it melts into the apple.
Lemon juice
Adds acidity that brightens the sweetness of the apple and sugar.

The step that matters

Sealing and wrapping the dumplings. Dough edges must be sealed and the cloth tied firmly, otherwise water can enter during boiling and make the dumpling soggy, while leaving room for swelling keeps the dough from bursting as the dough expands with heat.

Swap the raspberry

The recipe marks raspberry as optional. How well each one fits the dish's main ingredients (apple, sugar, lemon, flour):

  1. Raisinfits better
  2. Vanillafits better
  3. Orangefits better
  4. Raspberrythe original

Fit is the average pairing score against apple, sugar, lemon, flour. Candidates are from the same food group and used in at least 100 recipes.
