Lemon Ice Cream

Ingredients

Directions

Prepare the base

  1. Reserve 1 pint of cream from the 2 quarts.

  2. Gradually stir 1 pound of powdered sugar into the pint of cream.

  3. Add the grated rind and juice of the lemon, or lemon essence if using.

  4. Beat this mixture into the remaining 3 pints of cream until well combined.

  5. Cover and let it infuse for 30 minutes to 1 hour.

  6. Taste and adjust with more lemon juice or sugar if needed.

  7. Strain the mixture through a fine strainer into the ice cream freezer.

Freeze

  1. Fill an ice cream tub with equal parts coarse salt and crushed ice.

  2. Place the freezer in the tub, ensuring it is surrounded by the salt and ice mixture.

  3. Turn the freezer handle until the mixture is frozen, about 2 hours.

  4. Occasionally scrape down the sides with a long-handled spoon to ensure even freezing.

  5. Once frozen, transfer the ice cream to a mold and return it to the tub.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cream
Provides richness and fat, giving the ice cream a smooth, creamy texture.
Powdered sugar
Sweetens the base and lowers its freezing point, keeping the ice cream softer.
Lemon
Supplies bright acidity and aroma from the rind and juice.

The step that matters

Turn the freezer handle until frozen. Churning and scraping keep ice crystals small and the texture smooth. Stopping too early leaves the base icy, while the salt and ice bath must stay packed around the freezer to chill it evenly.

Swap the lemon

The recipe marks lemon as optional. How well each one fits the dish's main ingredients (cream, sugar):

  1. Vanillafits better
  2. Strawberryfits better
  3. Raspberryfits better
  4. Lemonthe original

Fit is the average pairing score against cream, sugar. Candidates are from the same food group and used in at least 100 recipes.
