Ox Tongue a LA Calcutta
Ingredients
Directions
Boil or bruise the ox tongue, then skewer it to a board to maintain its shape.
Trim the tongue nicely and remove any excess fat.
Thinly glaze the tongue and decorate the tip with sieved egg yolk and green butter or ham butter.
Garnish the rest of the tongue in rows with the same mixture and secure with a frill.
Place a bed of dressed green salad on the sides to fill the hollow and add curried eggs cut in quarters.
Surround the dish with chopped aspic and lay a border of curried quenelles, adding sprigs of parsley or chervil in between.
When ready to serve, place small blocks of Ice Sauce a la Calcutta on a dish or in tiny moulds, garnishing with green salad and leaf-shaped pieces of pink aspic.
