Timbale of Hare, Iced
Ingredients
Directions
Line a timbale mold with aspic flavored with 1 tablespoon of dissolved currant or tomato jelly.
Fill the mold with the purée of hare and set on ice for a few hours.
Turn out the timbale and coat with blocks of yellow aspic and little heaps of currant jelly that have been chilled.
In between, add dressed salad and sliced stuffed eggs coated with a purée of sieved foie gras mixed with equal parts brown sauce and liquid aspic, whisked over ice.
After filling the mold with hare purée, pour a layer of aspic, ½ inch thick, over it to cover completely.
Garnish the top with contrasting ingredients used for the base.
