Why it works: Parsley and lemon match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 14,037 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

Cold Meat Puffs

Oven, in the book's wordsA quick oven

Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the filling

  1. Make a mince of cold meat using thick sauce or gravy to moisten and season well.

Shape the puffs

  1. Roll out rounds of potato pastry the size of a large breakfast cup.

  2. Place the mince on one side of each round, brush the inner edges with beaten egg, fold over, and pinch to seal.

Cook and serve

  1. Bake in a preheated oven at 400°F (200°C) until brown, or fry in hot fat until crisp.

  2. If baking, mark the tops slantwise and brush with raw egg or milk before baking.

  3. Serve with a suitable sauce or gravy, garnished with fried parsley and diced lemon.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cold meat
Provides the savoury filling that the puffs are built around.
Thick sauce or gravy
Moistens the minced meat so the filling stays juicy rather than dry.
Potato pastry
Forms the tender outer casing that encloses the filling and browns during cooking.
Beaten egg
Seals the pastry edges and, brushed on top, helps the crust brown.

The step that matters

Sealing the pastry edges. If the inner edges are not brushed with egg and pinched firmly, the filling can leak out during baking or frying. Sealing keeps the moisture inside and the puff intact.

Swap the potato

How well each one fits the dish's main ingredients (meat, sauce, egg, parsley, lemon):

  1. Shallotfits better
  2. Asparagusfits better
  3. Spinachfits better
  4. Potatothe original

Fit is the average pairing score against meat, sauce, egg, parsley, lemon. Candidates are from the same food group and used in at least 100 recipes.
