Sole with Fine Herbs

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Melt the butter in a sauté pan.

  2. Add the stock, shallots, parsley, salt, and pepper, and warm gradually.

  3. Wash and skin the sole, then place it in the pan when the mixture is hot.

Cook and serve

  1. Cover closely and cook in a moderate oven at 350°F (175°C) for 40 minutes.

  2. Just before serving, add the anchovy and Harvey sauce.

  3. Transfer the sole to a hot dish and strain the sauce over it.

What each ingredient does

Sole
Is the main protein, cooked gently in the covered pan until it turns flaky and tender.
Butter
Adds richness and fat that carries the flavour of the herbs and shallots into the sauce.
Stock
Forms the liquid base of the sauce and keeps the fish moist during covered cooking.
Shallots
Contribute a mild, sweet onion flavour that softens as the sauce warms and cooks.
Anchovy sauce
Adds a salty, savoury depth to the sauce, added late so its flavour stays sharp.

The step that matters

Cover closely and cook in the oven. Covering the pan traps steam so the sole cooks gently in the liquid. Too much heat or too long a time can dry or toughen the delicate flesh and break it apart.

Swap the shallot

How well each one fits the dish's main ingredients (butter, parsley, anchovy, sauce, pepper):

  1. Shallotthe original
  2. Capsicumfits about as well
  3. Chivefits less well
  4. Carrotfits less well

Fit is the average pairing score against butter, parsley, anchovy, sauce, pepper. Candidates are from the same food group and used in at least 100 recipes.
