What each ingredient does

Tench
The fish is the main component, cooked whole so its flesh stays moist inside the wrap.
Salad oil
Carries the herbs and seasoning into the fish and helps prevent sticking and drying during grilling.
Shallots
Add a mild, aromatic sweetness that infuses the flesh during the marinade.
Onion
Contributes aromatic flavour that softens and mellows during marinating.

The step that matters

Wrapping in oiled parchment before grilling. Drained, well-oiled parchment shields the delicate fish from direct flame, so it cooks gently and steams in its own juices rather than drying or charring. Excess marinade left on the fish can flare up and scorch the paper.

Swap the onion

How well each one fits the dish's main ingredients (shallot, parsley, pepper, sauce):

  1. Chivefits better
  2. Horseradishfits better

Fit is the average pairing score against shallot, parsley, pepper, sauce. Candidates are from the same food group and used in at least 100 recipes.
