Why it works: Pepper and parsley match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 34,122 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Ingredients

Directions

The book gives no cooking times; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare

  1. Remove the skins from the whiting and fasten the tail in the mouth with a small skewer.

  2. Mix flour with salt and pepper, then sprinkle the mixture over the fish.

  3. Brush the fish with beaten egg and coat with breadcrumbs.

Fry and serve

  1. Fry the fish in hot fat for 6 to 7 minutes until nicely browned.

  2. Serve on a dish with paper, garnished with sprigs of fresh or fried parsley.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Whiting
The main fish, which gets cooked through in the hot fat while its coating crisps.
Flour
Dries the fish surface and helps the egg and breadcrumbs stick.
Egg
Binds the breadcrumb coating to the fish so it stays on during frying.
Breadcrumbs
Form a crisp, golden coating that browns in the hot fat.

The step that matters

Frying in hot fat. If the fat is not hot enough, the coating absorbs oil and turns greasy instead of crisping. Hot fat sears the breadcrumb surface quickly, sealing in moisture and producing even browning.

Swap the parsley

How well each one fits the dish's main ingredients (whiting, flour, pepper, egg):

  1. Parsleythe original
  2. Capersfits about as well
  3. Nutmegfits less well
  4. Turmericfits less well

Fit is the average pairing score against whiting, flour, pepper, egg. Candidates are from the same food group and used in at least 100 recipes.
