Why it works: Cauliflower and beetroot match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 146 recipes. Both carry coumarin, which smells sweet, hay. The science ↓

Cauliflower Salad

Ingredients

Directions

Cook the cauliflower

  1. Boil the cauliflower in salted water until a fork can easily pierce it, but do not overcook.

  2. Transfer the cauliflower to cold water, then drain it in a sieve.

  3. Divide the cauliflower into walnut-sized tufts.

Assemble and serve

  1. Arrange the tufts in a shallow dish, placing strips of beetroot between them.

  2. Drizzle salad cream over the arranged salad.

What each ingredient does

Cauliflower
Forms the main body of the salad, with a tender texture when boiled just until pierced.
Beetroot strips
Add colour and a mild earthy sweetness between the cauliflower tufts.
Salad cream
Adds a creamy, tangy dressing that moistens and flavours the salad.

The step that matters

Boil the cauliflower until just tender. Overcooking breaks down the cauliflower's cell walls, making it soft and watery and less pleasant to eat. Stopping when a fork pierces it easily keeps some firmness.

Swap the cauliflower

How well each one fits the dish's main ingredients (beetroot, cream):

  1. Horseradishfits better
  2. Lettucefits better
  3. Parsnipfits better
  4. Cauliflowerthe original

Fit is the average pairing score against beetroot, cream. Candidates are from the same food group and used in at least 100 recipes.
