Bread Pudding

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the custard

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, combine milk, bread crumbs, beaten egg yolks, lemon juice, lemon rind, sugar, and butter. Mix well until the mixture resembles a custard.

  3. Pour the mixture into a baking dish and bake until set.

Top and serve

  1. While baking, beat the egg whites to a stiff froth.

  2. Spread the beaten egg whites over the pudding as frosting before serving.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Milk
Forms the liquid base that sets into a soft, custard-like texture.
Bread crumbs
Absorb the liquid and give the pudding its body.
Egg yolks
Thicken the custard as they set and add richness.
Egg whites
Beaten to a stiff froth, they make a light topping that browns and holds its shape.
Sugar
Adds sweetness and helps the custard brown lightly on top.

The step that matters

Bake until set. Egg proteins set with heat, so the pudding should be baked until just firm. Underbaking leaves it runny, while overbaking can make it curdled and grainy.

Swap the lemon

How well each one fits the dish's main ingredients (milk, bread, egg, sugar, butter):

  1. Vanillafits better
  2. Figfits better
  3. Peachfits about as well
  4. Lemonthe original

Fit is the average pairing score against milk, bread, egg, sugar, butter. Candidates are from the same food group and used in at least 100 recipes.
