Nice Lemon Pudding

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the pudding

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, mix the butter and sugar until smooth.

  3. Add the grated lemon rind, egg yolks, lemon juice, and the crackers dissolved in milk; mix well.

  4. Pour the mixture into a baking dish and bake until set.

Top and brown

  1. In another bowl, beat the egg whites until stiff peaks form, then gradually add the sugar.

  2. Spread the meringue over the pudding and brown in the oven.

What each ingredient does

Egg yolks
Enrich the custard and help it set when baked.
Egg whites
Whipped with sugar to form the meringue topping, which gives lift and a browned finish.
Lemon juice
Adds acidity that gives the pudding its bright, tart flavour.
Crackers
Dissolved in milk to thicken and add body to the pudding.
Butter
Adds richness and a smooth, tender texture to the pudding.

The step that matters

Beating the egg whites to stiff peaks. Egg whites must be beaten until stiff and the sugar added gradually so the meringue holds its shape and bakes into a stable, glossy topping. Underbeaten or greasy whites will weep or collapse.
