Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Isinglass
Gelatin-like protein that sets the juice into a firm jelly as it cools.
Sugar
Adds sweetness and body, and helps give the jelly a clear, firm set.
Orange juice
Provides the main flavor and liquid base of the jelly.
Egg white
Binds particles as it cooks so they can be removed, clarifying the jelly.

The step that matters

Skim off any foam that forms. Foam and impurities that rise while the mixture boils will cloud the jelly if left in, so removing them keeps the final jelly clear.

Flavor stand-ins for the saffron

The recipe marks saffron as optional. How well each one fits the dish's main ingredients (sugar, orange, lemon, egg):

  1. Cinnamonbetter flavor fit
  2. Nutmegabout as good a flavor fit
  3. Gingerabout as good a flavor fit
  4. Saffronthe original

Fit is the average pairing score against sugar, orange, lemon, egg. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
