Why it works: Sugar and molasses are a kitchen classic. They rank in the top 11% of all ingredient pairs, and cooks put them together in 9,225 recipes. Both carry ethanol, which smells alcoholic, ethereal. The science ↓

Butter Taffy

Ingredients

Directions

The book gives no oven temperature. The 250°F in the steps was added when the recipe was transcribed, as a starting point.

Make the syrup

  1. In a saucepan, combine sugar, water, molasses, and vinegar.

  2. Cook over medium heat until the mixture reaches the hard ball stage (about 250°F or 121°C).

Finish and shape

  1. Remove from heat and stir in the butter until melted.

  2. Pour onto a buttered surface and let cool slightly.

  3. When cool enough to handle, pull and stretch the taffy until it becomes light in color.

  4. Cut into pieces and wrap in wax paper.

What each ingredient does

Sugar
Forms the sweet base, and cooking it to hard ball stage sets the candy's chewy texture.
Molasses
Adds depth of flavor and a darker color to the taffy.
Vinegar
Acidity helps keep the sugar from crystallizing, so the taffy stays smooth.
Butter
Adds fat and richness, giving the taffy a softer bite and buttery flavor.

The step that matters

Cook to the hard ball stage. Cooking the syrup to about 250°F controls how much water is left, which decides whether the taffy is chewy or too soft or brittle. Stopping early gives a sticky candy that will not hold its shape.
