Baked Rabbit Pie

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

  1. Preheat the oven to 350°F (175°C).

  2. Prepare the pie crust and set aside.

  3. Cook the rabbit with butter, onions, carrots, and celery until tender.

  4. Add seasoning to taste and mix with broth.

  5. Fill the pie crust with the rabbit mixture.

  6. Cover with another layer of pie crust and seal the edges.

  7. Cut slits in the top crust for steam to escape.

  8. Bake for 45 minutes or until golden brown.
