Ingredients

Directions

Make the syrup

  1. Pour hot molasses over the tomatoes and let stand for 12 hours.

  2. Add ginger tied in cloth or lemon peel during boiling for flavor.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Ripe tomatoes
Provide the bulk of the preserve and break down into soft, tender pieces when cooked.
Hot molasses
Acts as the sweetener and thick syrup base, drawing moisture from the tomatoes as it stands.

The step that matters

Continue boiling the syrup until thick. Removing the tomatoes and boiling the syrup concentrates its sugar and reduces water. Stopping too early leaves a thin syrup that may not keep well as a preserve.

Swap the tomato

The recipe marks tomato as optional. How well each one fits the dish's main ingredients (molasses, ginger, lemon, sugar):

  1. Sweet potatofits better
  2. Arrowrootfits better
  3. Carrotfits better
  4. Tomatothe original

Fit is the average pairing score against molasses, ginger, lemon, sugar. Candidates are from the same food group and used in at least 100 recipes.
