Why it works: Ginger and clove match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 6,038 recipes. Both carry estragole, which smells anise, licorice. The science ↓
Soyer's Recipe for Pickling Oysters for the London Markets
Ingredients
Directions
Put the oysters with their liquor in an earthen pan over low heat to simmer.
Skim off the scum as it rises.
Add whole pepper, sliced ginger, cloves, chopped chilies, and a little vinegar.
Simmer for no longer than five minutes, then remove from heat.
Remove the gills from the oysters and place them in a barrel.
Once the liquor is cold, strain it and add it to the oysters.
