Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Yolks thicken the custard and whites add lightness to the finished dessert.
Sugar
Adds sweetness and balances the sharpness of the lemon.
Lemon juice
Adds acidity and bright flavour that cuts through the richness of the custard.

The step that matters

Stirring the yolks over boiling water. Egg yolks thicken gently as they heat. If the heat is too high or stirring stops, the yolks can scramble, leaving lumps instead of a smooth custard.
