Why it works: Sugar and flour are a kitchen classic. They rank in the top 15% of all ingredient pairs, and cooks put them together in 92,116 recipes. Both carry phenylacetaldehyde, which smells hawthorne, honey. The science ↓
Never-fail Sponge Cake
Ingredients
Directions
The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.
Prepare the batter
Preheat the oven to 350°F (175°C).
Beat the egg whites until stiff peaks form.
Gradually add ½ cup sugar to the egg whites and beat until combined.
In a separate bowl, beat the egg yolks with ½ cup sugar for 5 minutes.
Add the lemon juice and grated rind to the yolks and mix well.
Gently fold the egg whites into the yolk mixture.
Sift in the flour and gently fold it in with a wooden spoon.
Bake
Pour the batter into a prepared pan and sprinkle 1 tablespoon of sugar on top.
Bake for 25 minutes.

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Eggs
- Whites trap air for lift and yolks add richness and structure to the crumb.
- Granulated sugar
- Sweetens the cake and helps stabilise the whipped egg whites.
- All-purpose flour
- Provides the starch and gluten that set the sponge's structure as it bakes.
- Lemon
- Adds acidity and aroma that brighten the flavour of the sponge.
The step that matters
Folding the egg whites into the yolk mixture. Gentle folding keeps the air in the whipped whites. Stirring or deflating them makes the sponge dense and flat instead of light.
