Directions

Make the beef tea

  1. Place the beef in a jar without adding any water.

  2. Cover the jar tightly and place it in a pot of cold water.

  3. Gradually heat the pot to a boil and maintain a steady boil for 3 to 4 hours until the meat resembles white rags and the juice is fully extracted.

Season and skim

  1. Season with salt to taste, and when cool, skim off any fat.

What each ingredient does

Lean beef
Supplies the protein and flavor compounds that release into the liquid during slow, gentle cooking.

The step that matters

Maintaining the steady boil for 3 to 4 hours. Long, steady heating gradually breaks down the meat and draws its juices out. Cutting the time short leaves the beef tea weak and the meat still holding much of its flavor.
