Stuffed Eggs

Oven, in the book's wordsA rather slow oven

Ingredients

Directions

The book says “a rather slow oven”. The 300°F in the steps is the modern equivalent, not the book's own figure.

Prepare the filling

  1. Cut the hard-boiled eggs in half and remove the yolks.

  2. Mash the yolks finely and mix in butter, cream, onion juice, salt, and pepper.

Stuff and coat

  1. Fill the egg whites with the yolk mixture and press them together.

  2. Combine any leftover filling with the beaten egg and cover the stuffed eggs with this mixture.

  3. Roll the eggs in cracker crumbs.

Fry or bake and serve

  1. Fry in boiling fat until light brown.

  2. For baked eggs, place fresh butter in a round oven-safe dish and break in desired number of eggs.

  3. Add a few bits of butter on top and bake in a slow oven (300°F/150°C) until cooked.

  4. Serve with buttered toast and garnish with curled parsley.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Hard-boiled eggs
Provide the whites that hold the yolk filling and the body of the dish.
Butter
Adds richness and a smooth texture to the mashed yolk filling.
Cream
Loosens the mashed yolks so the filling becomes smooth and spreadable.
Beaten egg
Binds the coating so the cracker crumbs stick to the stuffed eggs.
Cracker crumbs
Form a crisp, golden browned coating when the eggs are fried.

The step that matters

Frying in boiling fat until light brown. If the fat is not hot enough, the coating absorbs grease and turns soggy, while overly high heat browns the crumbs before the coating sets. Hot, steady fat gives a crisp, evenly browned crust.

Swap the onion

How well each one fits the dish's main ingredients (egg, butter, cream, pepper):
