What each ingredient does

Small white onions
Main vegetable that is pickled, becoming tender yet still firm after scalding.
Boiling hot vinegar
Provides acidity that sharpens flavour and helps preserve the onions.
Whole black pepper
Adds warm, pungent aroma that infuses into the pickling liquid.
White mustard seed
Adds sharp, pungent flavour that infuses into the vinegar.

The step that matters

Cool the vinegar before corking. Sealing the bottles while the hot vinegar is still warm can trap steam and build pressure inside. Letting the onions cool first keeps the jars safer to seal and lets the flavours settle.

Swap the onion

How well each one fits the dish's main ingredients (vinegar, pepper, mustard):

  1. Horseradishfits better
  2. Radishfits better
  3. Lettucefits better
  4. Onionthe original

Fit is the average pairing score against vinegar, pepper, mustard. Candidates are from the same food group and used in at least 100 recipes.
