Spanish Cream

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the custard

  1. Soak the gelatin in the milk for 30 minutes.

  2. Heat the milk until boiling.

  3. Beat the egg yolks and sugar together, then add them to the boiling milk.

  4. Stir and cook until the mixture thickens.

  5. Remove the custard from heat and fold in the beaten egg whites until well combined.

  6. Add vanilla extract.

  7. Pour the custard into a mold to cool.

Top and bake

  1. Beat the egg whites with lemon juice and ½ cup sugar until stiff peaks form.

  2. Spread the meringue over the cooled cream.

  3. Brown the meringue slightly in a 350°F (175°C) oven.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Milk
Forms the body of the cream and carries the sweetness and richness of the dish.
Eggs
Egg yolks thicken the custard while whipped whites give the meringue its airy structure.
Gelatin
Sets the cooled custard so it holds its shape when unmolded.
Sugar
Sweetens the custard and stabilizes the whipped egg white meringue.

The step that matters

Cooking the custard until it thickens. Egg yolks thicken as their proteins coagulate with heat, but overheating can curdle them. Stir steadily and remove from heat once it thickens.

Swap the lemon

How well each one fits the dish's main ingredients (milk, egg, gelatin, sugar, vanilla):
