Rhubarb Jelly

Ingredients

Directions

Prepare the juice

  1. Wash the rhubarb stalks well and cut them into small pieces.

  2. Place the rhubarb in a pot and add enough water to cover it.

  3. Boil the rhubarb until it becomes a soft pulp.

  4. Strain the mixture through a jelly bag to extract the juice.

Make the jelly

  1. For each pint of rhubarb juice, add 1 pound of sugar.

  2. Optionally, add the juice of 1 lemon and half the rind to every 3 pints of rhubarb juice, boiling for a few moments.

  3. Boil the mixture, skimming off any foam.

  4. When the jelly reaches the desired consistency, pour it into jars.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rhubarb stalks
Provide the tart flavour and the pectin-rich pulp that lets the juice set into jelly.
Sugar
Sweetens the juice and helps the jelly set and keep its texture.
Lemon juice
Adds acidity that brightens flavour and supports jelly setting.

The step that matters

Boiling to the desired consistency. Boiling must continue until the jelly reaches the right set. Too little boiling leaves it runny, while overboiling can make it stiff or cloudy. Skimming foam keeps the jelly clear.

Swap the rhubarb

How well each one fits the dish's main ingredients (sugar, lemon):

  1. Cinnamonfits better
  2. Gingerfits better
  3. Marjoramfits better
  4. Rhubarbthe original

Fit is the average pairing score against sugar, lemon. Candidates are from the same food group and used in at least 100 recipes.
