Rib Roast

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Remove the ribs and backbone from the roast.

  2. Roll the meat tightly and secure it with twine.

  3. Roast the meat at 350°F (175°C), allowing a little extra time per pound.

  4. Brown the potatoes in the pan with the beef.

  5. Serve with brown gravy mixed with boiled parsley.

  6. Garnish with parsley and sliced blood-beet pickles.
