Ambushed Asparagus

Ingredients

Directions

Prepare the asparagus

  1. Cut off the tender tips of the asparagus and boil in salted water until tender.

  2. Drain and chop finely.

Prepare the biscuits

  1. Cut off the tops of the biscuits. Scoop out the insides.

  2. Place both the tops and insides in the oven to dry.

Make the filling

  1. While drying, heat the milk in a saucepan.

  2. Stir in the eggs. Strain the mixture.

  3. Return it to the heat. When it thickens, add the butter, salt, pepper, and chopped asparagus.

  4. As it begins to boil, remove from heat.

Assemble and serve

  1. Fill the biscuits with the mixture. Carefully replace the tops.

  2. Set the filled biscuits in the oven for 3 minutes.

  3. Arrange on a dish. Serve.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Set and thicken the milk mixture into a custard-like filling.
Milk
Forms the liquid base of the filling and keeps it moist and creamy.
Asparagus
Provides the main vegetable flavor and texture inside the filling.
Biscuits
Act as the edible vessel that holds the filling.
Butter
Adds richness and a smoother, silkier texture to the filling.

The step that matters

Heating the egg and milk mixture. Eggs thicken as they heat, but overheating or boiling can curdle them into a grainy texture. Removing the mixture from heat as it just begins to boil, and straining it, keeps the filling smooth.
