Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Thicken the cream as they heat and set into a smooth, custard-like texture.
Cream
Provides richness and fat, giving the dessert a smooth, creamy mouthfeel.
Sugar
Sweetens the dessert and balances the sharpness of the lemon.
Lemon
Adds bright acidity and aroma from the rind and juice.

The step that matters

Heating the egg yolk mixture. Egg yolks thicken as they heat, but if the mixture overheats or boils too hard it can curdle or turn grainy. Stirring constantly spreads the heat evenly and keeps the texture smooth.
