What each ingredient does

Oysters
Provide the main body and briny flavour of the dish.
Vinegar
Adds acidity that sharpens the flavour and helps preserve the oysters.
Oyster liquor
Carries the sea flavour and moisture into the spiced liquid.
Cloves
Add warm, aromatic spice notes to the pickling liquid.
Nutmeg
Contributes warm, aromatic sweetness to the spiced liquid.

The step that matters

Heating over low heat. Stirring from the bottom prevents the spices and liquid from scorching on the base of the vessel. Removing the pan once it boils keeps the oysters from toughening and overcooking.
