Tomato Pie

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. Pare and slice the green tomatoes.

Assemble the pie

  1. Place the sliced tomatoes in the pie crust.

  2. Sprinkle flour and sugar or molasses over the tomatoes.

  3. Add lemon slices and pour in the water.

  4. If using ripe tomatoes, beat the egg and mix with cream, then pour over the filling.

Bake

  1. Bake for 30-40 minutes or until the crust is golden.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Green tomatoes
Form the bulk of the filling and provide the pie's tart, fruity flavour.
Flour
Thickens the juices released by the tomatoes so the filling sets rather than running.
Sugar or molasses
Balances the tartness of the green tomatoes and adds sweetness.
Lemon
Adds acidity and brightness that lifts the flavour of the tomatoes.
Egg
Sets the custard-like layer when used with ripe tomatoes, giving structure to the filling.
