Lemon Pudding

Ingredients

Directions

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the lemon butter

  1. In a saucepan, combine the butter and sugar over medium heat and stir until it boils.

  2. Remove from heat and grate the lemon rind into the mixture; let it cool.

Assemble and bake

  1. Beat the eggs and squeeze the lemon juice over them.

  2. Mix the cooled butter and sugar mixture with the eggs.

  3. Line a dish with pastry and fill it with the mixture.

  4. Bake in a slow oven at 300°F (150°C) until set.

Serve

  1. Add bits of candied lemon-peel before serving if desired.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Adds richness and a tender, smooth texture to the filling.
White sugar
Sweetens the filling and helps it set smoothly when cooked.
Lemon
Zest gives aroma and juice provides the tart acidity of the pudding.
Eggs
Set during baking to give the pudding its structure and body.

The step that matters

Bake until set. Eggs set as their proteins coagulate with heat. Underbaking leaves the filling runny, while overbaking at this temperature can make it curdle or turn grainy.

Swap the lemon

The recipe marks lemon as optional. How well each one fits the dish's main ingredients (butter, sugar, egg):

  1. Vanillafits better
  2. Lemonthe original
  3. Raisinfits about as well
  4. Figfits about as well
