What each ingredient does

Sago
Swells in the milk to give the pudding its body and soft, tender texture.
Milk
Cooks with the sago to form a creamy base and adds moisture.
Eggs
Set during baking to bind the pudding into a custard-like structure.
Butter
Adds richness and fat, giving a smoother mouthfeel to the pudding.
White sugar
Adds sweetness and helps soften the texture of the baked custard.

The step that matters

Stirring the eggs into the cooled mixture. If the mixture is still hot when the eggs go in, they can scramble instead of blending smoothly. Letting it cool first keeps the custard smooth and evenly set during baking.
