What each ingredient does

Ox-tongue
Provides rich, savoury meat that gives the filling body and a traditional texture.
Beef kidney suet
Adds fat that keeps the filling moist and rich in the finished mixture.
Raisins
Add concentrated sweetness and chewy texture to the filling.
Currants
Add sweetness and chewy texture throughout the mixture.
Fine sugar
Adds sweetness and helps preserve the mixture.
Brandy
Acts as a preservative and adds aroma that helps the filling keep for weeks.

The step that matters

Store for a few days before using. Resting lets the spirits, sugar and spices soak into the fruit and meat and blend their flavours, and the high sugar and alcohol content help the filling keep for weeks.

Swap the mace
