Fine Almond Cake

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the batter

  1. Blanch, dry, and pound the almonds to a fine paste.

  2. Moisten the paste with a few drops of cold water or egg white.

  3. Whisk the eggs until very light and gradually mix them with the almond paste.

  4. Slowly add the sugar while constantly beating the mixture with a large wooden spoon.

  5. Gradually mix in the flour until well combined.

  6. Melt the butter and let it cool slightly, then beat it into the mixture gradually.

  7. Add the lemon zest and mix well.

Bake

  1. Pour the batter into a well-buttered mold, filling it more than half full.

  2. Bake in a preheated oven at 350°F (175°C) for 1.5 to 2 hours, covering with paper if it browns too quickly.

What each ingredient does

Fresh jordan almonds
Provide the main almond flavor and the bulk of the cake's body once ground into paste.
Bitter almonds
Add a concentrated, slightly bitter almond aroma that deepens the flavor.
Eggs
Whisked for lightness and bind the almond paste into a structured, airy batter.
Fine granulated sugar
Sweetens the cake and helps the batter hold air when beaten.
All-purpose flour
Adds structure so the batter sets into a firm crumb as it bakes.
Unsalted butter
Adds richness and moistness, giving a tender texture and fine crumb.

The step that matters

Bake low and cover the top if it browns. The batter is rich in sugar, butter and almond, so it browns quickly on the outside before the center sets. Covering with paper slows browning, letting the interior cook through over the long bake.
