Why it works: Sage and pepper match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 5,388 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓
Roast Goose
Ingredients
Directions
The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.
Pare and boil the potatoes until tender.
Mash the potatoes and mix in the chopped onion, sage, salt, pepper, and butter.
Stuff the goose with the potato mixture and truss it.
Roast the goose in a 400°F (200°C) oven for 1 hour and 30 minutes, or 1 hour and 45 minutes if using a tin kitchen.
Make gravy using the drippings, skimming off the fat before adding to the gravy.
Serve with apple sauce.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
