What each ingredient does

Granulated gelatin
Provides the gel structure that sets the liquid into a jelly when chilled.
Sherry
Adds aromatic flavour and a fuller wine character to the jelly.
Sugar
Adds sweetness and balances the acidity of the lemon juice.
Lemon juice
Adds acidity that brightens the flavour and balances the sweetness.

The step that matters

Dissolving the gelatin. Gelatin must be fully dissolved in warm liquid before chilling; undissolved granules leave gritty spots and uneven setting. Soaking it first lets it hydrate evenly so it dissolves smoothly.

Swap the lemon

How well each one fits the dish's main ingredients (gelatin, syrup, apricot, sherry, sugar):

  1. Vanillafits better
  2. Peachfits better
  3. Pineapplefits better
  4. Lemonthe original

Fit is the average pairing score against gelatin, syrup, apricot, sherry, sugar. Candidates are from the same food group and used in at least 100 recipes.
