Beef Balls

Ingredients

Directions

  1. Wipe the steak and cut it into one-fourth inch strips.

  2. Scrape each strip with a silver spoon to remove the soft part of the meat, leaving the connective tissue.

  3. Form the meat into small balls, handling them lightly.

  4. Heat a steel omelet pan and sprinkle with salt.

  5. Add the meatballs, shaking constantly until the surface is seared.

  6. Arrange the balls on buttered toast and garnish with parsley.
