Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Egg yolks thicken the custard, and whipped whites lighten the finished cream.
Cornstarch
Starch thickens the liquid as it heats, giving the cream body.
Sugar
Sweetens the cream and balances the sharpness of the lemon.
Lemons
Juice gives the cream its sour flavour, and rind adds aroma.

The step that matters

Cook on the stove until thickened like custard. Egg yolks set and cornstarch gelatinises only when heated enough, so the cream thickens. Undercooked mixtures stay thin, while overheating can curdle the yolks.

Swap the lemon
