Orange Ice

Ingredients

Directions

Prepare the sugar

  1. Remove the rinds from the oranges, avoiding the white part underneath the yellow, and mix with a few lumps of sugar.

  2. Use these sugar lumps to prepare the clarified sugar.

Freeze and finish

  1. Add the juice of the oranges and lemon to the sugar and freeze as usual.

  2. When the ice is nearly frozen, mix in a meringue made from the egg whites and sugar thoroughly.

  3. Set aside to harden until needed.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Whipped into a meringue, they add a light, airy texture to the frozen ice.
Sugar
Sweetens the ice and keeps it softer by lowering the freezing point.
Oranges
Provide the main flavour and juice, along with aromatic oil from the rinds.
Lemon
Adds acidity that brightens the citrus flavour.

The step that matters

Mixing in the meringue. Fold the meringue in while the ice is only nearly frozen. If it is too hard, the meringue will not blend evenly, and if it is too soft, it can collapse and leave the texture dense.

Swap the orange

How well each one fits the dish's main ingredients (lemon, sugar, egg):

  1. Orangethe original
  2. Vanillafits about as well
  3. Limefits less well
  4. Raisinfits less well

Fit is the average pairing score against lemon, sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
