Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rice
Forms the body of the pudding as it softens and thickens in the milk.
Milk
Cooks with the rice to create the creamy liquid base of the pudding.
Egg
Sets during baking to bind the pudding into a soft, sliceable custard.

The step that matters

Bake in a water bath until set. Gentle, indirect heat from the water bath keeps the egg custard from overheating, which would make it grainy or curdled. Cooking only until just set leaves it smooth and tender.

Swap the lemon

The recipe marks lemon as optional. How well each one fits the dish's main ingredients (rice, milk, sugar, egg):

  1. Vanillafits better
  2. Coconutfits better
  3. Figfits about as well
  4. Lemonthe original

Fit is the average pairing score against rice, milk, sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
